Description

A fresh, vibrant Shopska Salad with crunchy cucumbers, juicy tomatoes, sweet peppers, and creamy feta, perfect for keto.


Ingredients

Scale

1 large tomato, diced

½ cucumber, peeled and chopped

¼ red bell pepper, diced

¼ small red onion, finely sliced (optional)

12 tbsp fresh parsley, chopped

50 g feta cheese, crumbled or grated

1 tbsp olive oil

1 tsp white vinegar

Salt and black pepper to taste


Instructions

1. Dice tomato, cucumber, bell pepper, and optional onion evenly.

2. Combine vegetables in a large bowl and sprinkle with chopped parsley.

3. Drizzle with olive oil and white vinegar, season with salt and pepper.

4. Crumble or grate feta cheese on top and gently toss.

5. Serve immediately or let sit 5 minutes for flavors to meld.

Notes

For extra creaminess, add avocado or Greek yogurt.
