Description
A creamy, cheesy, and smoky Keto Crustless Quiche Lorraine with only 3g net carbs per slice. Perfect for breakfast, lunch, or brunch.
Ingredients
2 tablespoons salted butter
½ medium yellow onion, peeled and diced
1 clove garlic, peeled and finely minced
8 slices beef bacon
6 large eggs
¾ cup heavy whipping cream
½ cup shredded Swiss cheese
½ cup shredded Monterey Jack cheese
Instructions
1. In a medium skillet over medium heat, melt butter, then add onion and saute until caramelized (about 15 minutes). Add garlic and cook for 30 seconds. Transfer to mixing bowl.
2. Replace pan over heat and add beef bacon. Fry until crispy, about 10–12 minutes. Drain on paper towels.
3. Preheat oven to 375°F.
4. Crack eggs into bowl with onion and garlic, pour in heavy cream, and whisk until combined.
5. Crumble beef bacon into the bowl, add cheeses, and mix. Pour into a 9-inch pie dish and bake for 20 minutes until set but slightly wobbly in center.
6. Cool for 15 minutes before slicing and serving.
Notes
Store leftovers in airtight container in fridge up to 4 days. Freeze for longer storage. Reheat gently to preserve texture.
