Description
This Easy Lamb Mince Ragu is a quick, hearty meal made with ground lamb, tomatoes, herbs, and stock. It’s rich, flavorful, and ready in under an hour. Serve it over pasta or mash for a cozy dinner any night of the week.
Ingredients
2 tbsp olive oil
½ small onion, finely chopped
2 garlic cloves, finely chopped
500 g (1 lb) ground lamb mince
1 tsp dried oregano
1 tsp smoked paprika
Salt flakes and black pepper to taste
1 tbsp tomato paste
1½ cups crushed tomatoes or passata
1½ cups beef stock, lamb stock or chicken stock
½ tsp chilli/red pepper flakes (optional)
½ – 1 tbsp white vinegar (optional)
1 handful fresh basil or parsley, finely chopped
Parmesan to serve
Instructions
1. Heat olive oil in a large pan over medium heat. Add the onion and cook for 2-3 minutes until softened. Stir in the garlic and cook for another minute.
2. Add the lamb mince and cook, breaking it up with a spatula, until browned. Season with oregano, paprika, salt, and black pepper.
3. Stir in the tomato paste and cook for a minute. Add the passata and stock. Add red pepper flakes if using.
4. Reduce heat to low and let the ragu simmer uncovered for 30–40 minutes, stirring occasionally, until thick and rich.
5. Add a splash of white vinegar at the end if needed to brighten the sauce. Taste and adjust seasoning.
6. Serve hot over keto pasta, regular pasta, or mashed vegetables. Garnish with fresh herbs and Parmesan.
Notes
For a low-carb option, serve with spiralized zucchini or mashed cauliflower. This ragu stores well in the fridge for up to 4 days and freezes beautifully.
