Ingredients
1 egg yolk
2 teaspoons apple cider vinegar or lemon juice
1 tablespoon Dijon mustard
1 cup light olive oil or avocado oil
Salt and pepper
Instructions
1. Mix egg yolk, vinegar, and mustard in blender.
2. Slowly add oil in thin stream with blender running until emulsified.
3. Season with salt and pepper.
4. For Thermomix: Whisk egg yolk, vinegar, mustard 20 sec/speed 4.
5. Set 3 min/speed 4, pour oil slowly onto lid.
6. Season.
Notes
Use fresh, room-temperature eggs.
Store in airtight jar for up to 7 days in fridge.
